.::happiness is…the smell of freshly-baked bread::. (’90 + 10 Seconds’ Microwave Keto Bread)

I call this my ’90 + 10 Seconds’ Microwave Keto Bread. I usually make this in a large Ramekin and it fits really nicely.

‘…+ 10 Seconds’ because I like to open the Microwave door after 90 Seconds and let the Bread ‘breathe’ a little before adding another 10 seconds just to be extra sure that it’s thoroughly cooked.

I really like the taste of this Bread, you can have it just like that ‘fresh-out-of-the-Microwave’ or very lightly-toasted (using a Toaster Oven is recommended as the texture could be a little bit fragile and might not survive a conventional Toaster)

’90 + 10 Seconds’ Microwave Keto Bread.

Ingredients:

1/3 Cup Almond Flour

1 heaped Tbsp. Flaxseed Meal

1/2 Tsp. Baking Powder

1/8 Tsp. Salt

2 1/2 Tbsp. Butter (or Coconut Oil/Olive Oil for the Paleo version)

1 Large Egg

Direction

Melt the Butter in the Ramekin (this will save you the time of having to butter the Ramekin later on – you’re welcome)

Whisk the Egg in a small bowl. In another bowl, combine the Almond Flour, Flaxseed Meal, Baking Powder & Salt. Mix well.

Pour the melted Butter and the Egg into the bowl where all the dry ingredients are and stir to combine until everything is well-incorporated.

Rub the sides of the Ramekin with the leftover melted Butter (there will be some left behind in it and you don’t need a lot) so that the Bread won’t stick and can be easily removed.

Microwave for 90 Seconds on High. Open the Microwave door, wait 5 seconds, then Microwave for a further 10 seconds. 

Get the Bread out and let it cool a little before slicing. Eat it with plenty of Butter or use it to make a Sandwich. Use a square-shape Microwaveable Glass Container – instead of a Ramekin – to make it look more “Sandwich Bread-Like” (But this is completely optional, who cares about the shape as long as it’s delicious right??)
